Add 500g of strong white flour, 1/2 a teaspoon of salt and 2 x7g sachets of fast action dried yeast to a bowl. Stir in 50g of caster sugar and one beaten egg. Mix together 125ml of milk and 150ml of hot water and add this to the mixture, stirring until you have have a soft dough (I use my Kitchen Aid with the dough hook attachment for this).
Place the dough onto a worktop and knead it until it is smooth and elastic, just like you would when making bread. Shape the dough into a round and slice in half. Roll each half into a sausage shape and divide each into 8 equal pieces. Roll each piece into a neat round shape and place on baking sheets, spaced well apart. If you are not using a non stick liner on your trays, you will need to oil them first.
Cover the trays with a tea towel and leave somewhere warm until the doughnuts have doubled in size. Bake for 12-15 minutes in a 200c oven until they are risen and lightly browned. Allow to cool on a wire rack. Take a sharp knife and make a cut in the side of each doughnut. Take a teaspoon and push it into the incision gently to make a rough hole. Place a good amount of your favourite jam inside. Brush the doughnuts with water and sprinkle generously with caster sugar, or, if you prefer, a mix of caster sugar and cinnamon.
